Nourish Your Cells with Fall Soup

What a lovely season for soups! Eating healthy real food, following the seasons helps our cell signaling processes within our body. I love to create delicious, easy foods and the other day this yummy soup was made.

This recipe is simple and will definitely support cellular communication, Enjoy!

Fall Soup
2 medium yellow onion
3 stalks celery
1/2 Tbsp coconut oil
3 sweet potato
1 head cauliflower
4 peppers (yellow, red, orange whatever you have)
1/4 cup chopped cilantro
1 tsp pink Himalayan salt
1/2 tsp pepper
1/2 tsp thyme
3 cups water

Put coconut oil and diced onion and celery in a pan and cook on medium heat until the onion is clear (a little brown on the edges adds flavour). When finished, add to the crock pot or soup pot.

Chop the remainder vegetables, potato and cauliflower in similar sizes and the peppers into smaller similar sizes and put into a crock pot or soup pot and add the spices.
If using a crock pot cook on low for 6 hours. If using a soup pot bring to a boil and then simmer for 45 minutes then let stand on the stove for another 20 minutes.

This soup can be eaten in a bowl as is, straight from the pot for those who like pureed soups this one turns out fabulous if you put in the blender for a minute before eating. After pureeing, put a tablespoon of plain yogurt on top and for those who like spice, add a few drops of hot sauce (my fav is Tabasco)… MMMMM Delicious! Plus you will most likely have left over. Store in glass mason jars that fit the size you would like for next time, great to take to work!
